I had some leftover potatoes and wanted to use them up. I was going to make potato pancakes but opted for Shepherd's Pie instead. This is a really yummy and super easy recipe for Shepherd's Pie. I augmented this recipe from Simply Recipes.
Ingredients:
1 lb ground beef
1-2 tablespoons of dried onions
1-2 cups vegetables, I used broccoli (Little Bit loves broccoli)
1-2 cups of leftover boiled potatoes
8 tablespoons butter (1 stick)
1/4 cup whole milk
1 cup beef broth
Salt, pepper, other seasonings of choice
Method:
Preheat oven to 400 degrees. Melt 4 tablepoons of butter in a skillet. Add the dried onions to the butter. Cook it for about 5 minutes. Add the ground beef to the butter mixture. Cook until there is no more pink in the meat. Add the vegetables, beef broth, and seasonings. Cook for around 10 minutes. If your mixture dries out add a little more beef broth. Put your left over potatoes into a bowl. Add the milk and 4 tablespoons of butter to the bowl. Microwave for 2 minutes. Mash up your potato mixture. Spray a baking pan with Pam. Add the meat mixture to the pan. Put the potato mixture on top. Bake for 30 minutes and enjoy!
