Hello old friends,<br />

It has been so long and so much has happened. Here is the short list:<br />
<br />
1. Our adoption agency went bankrupt and we lost every blessed penny<br />
2. We started over and are now on the waitlist again<br />
3. I have been diagnosed with mild sleep apnea which explains all the icky tiredness, dizziness, and general badness health wise I have been struggling with for a long time<br />
4. I'm at the begining of the treatment options for my condition but am thankful to God that He has provided an answer<br />
<br />
I hope all of you who still might drop by here will come and look at my new blog. I am going to focus on the adoption there. I would love to reconnect with you all.<br />

Everything is going along swimingly in fact. Except that I may have just put one to many logs on the fireplace. Pray that goes okay. Raging fires are nice unless they are coming out of the top of your chimney. I digress. This post is an update. For all of you who were with me when I started this blog and the journey toward adopting a little blessing from Ethiopia.<br />
<br />
First an adoption update. We are waiting. Waiting. AND THEN waiting. When a child becomes available and it is our turn on the waiting list we will receive what is called in the adoption world a referral. Based on the medical information and the picture we will determine if this child will be our daughter. Hubs and I have already agreed that whoever is in that picture is the child that God has picked for us. That is as much as I know for now. As I know more I will share it with you.<br />
<br />
Second a blogging update. At first it was a much needed vacation. Then I realized I quite enjoyed not constantly thinking about, planning for, writing on, and generally obsessing about my blog. It gave me more time for my son, my husband, my hobbies, and much needed mental rest. My long term goal is to use this as a creative outlet. A place to chronicle and share. Not a job.<br />
<br />
To all of you that have been so faithful about reading my blog I want to thank you. You have truly made me count each of you as my friends. I have felt guilty more than a few times about not visiting you or keeping you up to date on our adoption progress. I hope you are all well and that life is blessing you as much as it has and is blessing me.<br />

Then I felt worse than bad. I was very grumpy, tired, and turned from doing things that I loved. My blog was neglected because the thought of getting out my laptop and turning it on was more than I could handle.<br />
<br />
I was scared.<br />
<br />
When I was in my early twenties before I came back to my walk with the Lord I suffered from manic depression. It was a horrible dark time in my life. I lost years due to it. Years of laying in bed and staring at the same tree.<br />
<br />
One day God cured me.<br />
<br />
How cool is that? He turned my focus away from self and onto Him. When I started feeling bad a few months ago that little voice in my head told me "hey you weren't cured!" Being in the middle of an adoption is no time to start loosing your cool either. Giving a beautiful child to someone who is unraveling is not something Ethiopian officials do. <br />
<br />
So, I tried to ignore it. Then, it got worse.<br />
<br />
Finally after much encouragement from Hubs I made a doctors appointment. I cried, lots. What if, what if, what if....<br />
<br />
I went in and told her of my symptoms. She sent me out for tests. One of which was blood work. The results came back and my hemoglobin is a nine. A diagnosis of anemia with some other girly things mixed in.<br />
<br />
And that's okay.<br />
<br />
You know why?<br />
<br />
Because the diagnosis is not depression. <br />
<br />
Anemia makes me tired. Being tired makes me not want to do the things I normally love. Being tired makes me grumpy. Low oxygen levels really take it out of you. So, here's hoping to more alert days in my near future and hopefully a quick return to the life I once had.<br />

He has been doing well and I have already learned so much about schooling my little boy.<br />
<br />
I've learned that there is no way in you know what that my son is going to sit for more than five minutes at a time for an activity. Our lessons are very fluid and flexible. In fact, I mostly just have a list of the weeks objectives in my mind and roll them out whenever an opportunity presents itself.<br />
<br />
I've also learned that the timetable created for this curriculum will not work for my son. Even though he is a fast learner we are involved in so many activities that one week is not enough time to complete the unit. I am currently working on a two week plan. I feel less stressed and I think Little Bit has more time to absorb the information.<br />
<br />
Before my life as a Momma I was a teacher. That background has been very helpful. One thing that sprung to mind was creating a homeschool portfolio. The state of Virginia does not currently require homeschooled parents to produce a portfolio of their child's work to prove progress. Those laws can always change. Another thing that I like about keeping a portfolio is to show progress to skeptical family members. Colleges might also be impressed with a portfolio of work spanning a lifetime. Lastly, their something to be said to creating such a precious memento of your child's development.<br />
<br />
I am currently considering doing a large three ring binder with sheet protectors for each year we homeschool. It seems to me the best way to keep things nicely organized and easily accessible. Do you have any other ideas for how to retain so much information in a logical way? Do you keep a portfolio of your children's work? Being a Momma <strike>sometimes</strike> often means that you put the needs of others before your own. Caring for little humans is a busy job! I am a classically trained teacher, who better to teach them than me? This week our homeschool journey has begun. Thanks to the blessings of a preschool curriculum from <a href="http://www.abcjesuslovesme.com/2-year-old-curriculum" target="_blank">ABC Jesus Loves Me</a>, Little Bit and I are "doing school."<br />

School with a 2.5 year old is nothing like teaching 7th grade. It's sporadic. It's flexible. It's wonderful. When Little Bit has a moment of interest I sing him a song. This week it's Genesis 1:1 sung to the tune of where is thumbkin and lots of the ABC song.<br />
<br />
We are focusing on the color red, circles, and counting to one. Little Bit knows circles, counts to five, but has some trouble with colors. I am actually afraid that he may be color blind. Hubs thinks it's just a developmental issue and he will come along. He is doing marvelously.<br />
<br />
I love how I can feel through the curriculum. I don't have to do a certain list of objectives in a certain order that are confined to a limited time period. The learning flows and ebbs. We interject play alongside of worksheets. We look for shapes in God's creation. We count the magnificence around us. <br />
<br />
Am I following every aspect of the curriculum? Nope. Do I cross every t and dot every i? No way. Is Little Bit happy and learning. Yep. At 2.5 I would count our "school" work as an absolute success. It all seems to be about reading my child and providing him opportunities to learn instead of over planning every moment to force piles of information at a two year old.<br />
<br />
I wonder in the years to come if this lesson of balance will be pivotal to learning at home. I have a feeling it will. What a great journey we have begun. What a blessed woman I am able to partake and facilitate the education of my little blessings! When Little Bit was very small I tried hard to ban all screen time. We severely limited what and how much he watched. As he has gotten older we have eased up on that rule. Although he watches more than he used to we still filter what he watches. With many shows that are supposed to be "kid friendly" I am quite frankly horrified by their content. One series that I always like and can count on to be okay for Little Bit is Veggie Tales.<br />

The latest Veggie Tales is a reinterpretation of the classic story the Little Princess. I loved this classic when I was a child and honestly was pretty excited to watch "<a href="http://store.veggietales.com/the-penniless-princess-dvd.html" target="_blank">The Penniless Princess</a>." Little Bit is a two and a half year old boy. With that being said he enjoyed large portions of this movie. He was intrigued by the veggies and all of the songs. When the story focused around the little girl he lost interest.<br />
<br />
I loved the movie. I loved the story and even cried during parts of it. Yes, I'm a crier but this was heart wrenching stuff! I also really liked the message that the movie presented. The reoccurring theme was to act in a way that is pleasing to God even during the most difficult of circumstances. The movie presented the story through the classic story but also through references to the Bible and the story of Job.<br />

It was a copy of the 2012 Taste of Home Canning and Preserving magazine. I love putting a seed in the ground, watering, pampering, and harvesting. The final touch is turning that harvest into something delicious for my family.<br />

One way that I keep that harvest feeding my family throughout the year is to can & preserve. My Mommy in law knows how much I love this final step. She was so sweet and blessed me with the 2012 Taste of Home Canning & Preserving magazine. It is filled with oodles of fantastic recipes.<br />

I had about 40 medium tomatoes ripen over the weekend. There was a recipe in the magazine for mild salsa that I mostly liked. I can never seem to follow a recipe exactly as it is written. I added cilantro and lots more hot sauce than it called for. I omitted the jalapeno peppers because I didn't have any on hand. I thought I had tomato paste but it turns out it was tomato sauce. Se la vi! Tomato sauce it was!<br />

1 3/4 cups of white vinegar<br />
1/2 cup of sugar<br />
1 medium chopped red pepper<br />
1 chopped celery rib<br />
15 minced garlic cloves<br />
1/4 cup of canning salt<br />
lots of hot pepper sauce<br />

Directions<br />
<br />
Cook the tomatoes for twenty minutes over medium heat. Drain, but save two cups of the liquid. Put the tomatoes back in the pot. Stir in the remaining ingredients including the two cups of reserved liquid. Bring the mixture to a boil. Reduce the heat and simmer for one hour stirring frequently. Put the salsa into hot jars but leave 1/4 inch of head space in your pint jars. Add heated up canning lids and secure the rings. Process the jars for twenty minutes in a boiling water bath. Let your salsa set covered with a dry towel for at least 12 hours. You will hear a wonderful "ting" that will let you know that your can has sealed.<br />
