Empanada Recipe

The empanadas turned out very well yesterday. At least Hubs and I liked them. Little Bit flatly refused them. I'm not to offended though because he also refused ice cream ;D Here is the recipe for Amy's super simple empanada's.

Ingredients:

1 lb. ground beef
2 tablespoons of oil, I used extra virgin olive oil
2 tablespoons of dried onions
1-2 teaspoons of cumin
salt and pepper to taste
1 tube of thin crust pizza dough
2 teaspoons of white vinegar

Cooking Instructions:
Preheat your oven to 400 degrees. Brown and drain the ground beef. Set it aside while you saute the onions in the oil to bring out the taste. Remove the pan from heat and add the beef and all other ingredients except the pizza dough. Toss them together.

Traditional empanadas are triangle shaped. If you want to to that then cut the dough into rectangles and put the mixture in and seal with a fork like a pie. I was lazy and put the mixture in like a roll. I spread the dough out and put the mixture in the middle then folded the dough over and pressed it down.

Lastly you want to spray the empanada with cooking spray and cut slits into it for ventilation. Bake for 10 minutes and enjoy! This was super simple to make and really very tasty.
