1 1/4 cups sugar, I use splenda blend instead of real sugar
1/2 cup butter or margarine, softened
2 eggs
4 very, very ripe bananas
1/2 cup buttermilk, to make this I use skim milk and a teaspoon on white vinegar and let it set for about 5 minutes
1 teaspoon vanilla
2 1/2 cups all-purpose flour or wheat flour. Wheat flour tends to make it have a better consistency
1 teaspoon baking soda
1 teaspoon salt
2 tablespoons of cinnamon, plus I sprinkle some on top of the loaves for good measure.
Preheat your oven to 350 degrees. Grease two loaf pans. Mix all your ingredients together. Put half the batter in each pan and sprinkle with cinnamon. Bake for one hour. Use a toothpick to see if your bread is done. If the toothpick comes out clean it's ready! Try to resist cutting right into the bread and let it set up for an hour or so and then enjoy :D Although I admit that ours never makes it that long unless it's for someone else, hehe. Happy Baking!
