It is full on apple season here in Virginia. I live smack dab in the middle of apple country so I can get apples on the cheap. There just happens to be a whole crate of apples hanging out in my fridge at the moment. One recipe that I had to pull out was my Mom's Applesauce Cake. She may murder me if she finds out I shared it online but she doesn't own a computer so I feel fairly safe.
Ingredients:
1.5 cups of applesauce. I make my own applesauce out of my yummy fresh apples. I think this really makes the cake
.5 cup shortening
2 cups of sugar. I used .5 cup of brown sugar and 1.5 of white sugar.
1 egg
2.5 cups of white all purpose flour
.25 teaspoon of salt
1 tablespoon of cinnamon
.5 teaspoon of clove
.5 teaspoon of allspice
1 cup of black walnuts
1 cup of raisins
.5 cup of boiling water
Directions
Mix it all together and our into a greased flour mold. Bake for one hour at 350 degrees. Helpful hint, let the cake cool all the way before you take it out. I forgot that bit and that's why you don't have any pictures of my delicious but hideous applesauce cake.
That sounds so delicious! I love apples and anything to do with them. APple butter is my favorite.

I was just looking at Apple Cake recipes yesterday. MMMMmmmm this one sounds so good, but when I substitute Stevia, it just never tastes as good.

My Granddaughter has 1/3 of it at her apartment to help him eat it.
Sounds like a winner. My oldest son will go wild over this.

Okay, I just have to comment on how you make your measurements! LOL Never seen it done in decimals before. Sounds soooo yummy! I was just thinking about making applesauce muffins or something with my homemade plum/applesauce, but then I ate most of it. I'll have to go get some more apples. Oooorrr, I could do it with pear sauce!?! Maybe?

Excellent autumn recipe! Somehow cinnamon is one of my favorite autumn and winter spices! I don't like it in the spring or summer...strange!

ReplyDeleteWe do not have applesauce ready to buy in the supermarkets here so sometimes I find recipes that requires applesauce and no matter how tempting they look, I just skip trying them!
