Yellow squash is one of my favorite veggies to grow. They are super tasty and really easy to grow. They are so easy to grown that I often get overwhelmed by them. This year I am trying something new. I am blanching the squash so that I can use them in stir fry later. Blanching is simple and a great way to preserve your fresh foods.
Take three or four yellow squash and cut them up.
Boil your squash for 3 minutes and drain. Transfer them immediately to a bowl of ice water for 5 minutes.
Drain again and freeze.
Partially defrost these tasty treats and add to your stir fry! Garden treats for months to come :D
