Yellow squash is one of my favorite veggies to grow. They are super tasty and really easy to grow. They are so easy to grown that I often get overwhelmed by them. This year I am trying something new. I am blanching the squash so that I can use them in stir fry later. Blanching is simple and a great way to preserve your fresh foods.
Take three or four yellow squash and cut them up.
Boil your squash for 3 minutes and drain. Transfer them immediately to a bowl of ice water for 5 minutes.
Drain again and freeze.
Partially defrost these tasty treats and add to your stir fry! Garden treats for months to come :D
for some reason i have never bought yellow squash...but love to eat it!

I found when freezing produce, that if I spread one layer at a time on a cookie sheet, and freeze them then transfer to a bag, the produce doesn't stick together and I can more easily get only what I want instead of a big clump!
ReplyDeleteThe squash looks yummy! Following you from the Thursday Cup of Joe Blog Hop. Would love a visit and a follow back on my my blog: blog.writerslairbooks.com. Thanks! Nice to meet you.
ReplyDeleteMy husband's favorite veggie. I hope blanching keeps them from being so wet after thawing. I'm a new follower from Cup of Joe and I grabbed your button and liked your link. Doylene
ReplyDeleteWe ate these tonight in the stir fry I fixed. We eat them for breakfast with onions and garlic. We love them. I freeze the same way Becky does. It always works great.
