Ingredients:
1.5 cups of flour
1 cup of rolled oats
.5 cup of sugar
2 teaspoons of baking powder
1 teaspoon of baking soda
2 tablespoons cinnamon (we love cinnamon, if you don't use less)
dash of salt
1 egg
.75 cup of milk
.25 cup of vegetable oil
1 teaspoon of vanilla
5-10 ripe bananas (I used nine because that is how many I had ripe. I just throw in as much as I have around.)
Directions:
Preheat your oven to 400 degrees. Combine all of your ingredients. I use my stand mixer but I'm sure a hand mixer will work just fine. Try adding the dry ingredients slowly if you don't have a momba jamba mixer. Fill muffin cups 1/2 to 3/4 full depending on how tall you like your muffins. Bake for 18-20 minutes and enjoy!
Bananas are my favorite so I know this will be great.

ReplyDeleteah, like you I always try to make food that our little one would love. She's not exactly a picky eater but she eats like a bird and she easily gets tired of repeated food... so I am in constant search of new yummy and healthy recipes for her.
